In most uses, "either" is used when there is a choice between two alternatives.

Either I will call you or e-mail you.

I would be happy with either the blue one or the red one.

"Whether" is used in indirect questions to introduce one possibility and two introduce alternative possibilities.

I want to find out whether he passed the examination.
I want to find out whether he failed the examination.

Whether he comes or not, the ceremony will be held.
Whether he comes or he doesn't come, the ceremony will be held.

In one use, "whether" can mean "either".

He passed the examination, whether/either by skill or by luck.
So, when either is used as a conjunction, it can be used with more than two options. When either is used as an adjective or a conjunction, it usually is confined to two options. WHETHER CONJUNCTION and EITHER is a determiner or an adverb. Whether and if have similar meanings in reporting or in INDIRECT questions. But for listing two or more possibilities either is the correct grammatical word.
